In the volcanic Apaneca Ilamatepec mountain range, Jan-Carlo and Sofia Handtke own and manage Mapache Coffee, a fifth-generation company of coffee producers. The farm rarely sees sunlight, so this Pacas variety grows slowly under very humid conditions.  This honey-processed micro-lot has notes of kiwi, apricot, and honey. 

Mapache Coffee employs more than 125 locals year-round, but during harvest season, their staff increases to 600 people working together to tend to their six farm properties. 

With a strong commitment to the well-being of the coffee forests, Mapache ensures that every farm has a canopy protecting the coffee plants and soil. They use limited amounts of water during the washing process, then recycle and reuses that water in the same process. All the remaining pulp is incorporated back into the farms as compost, returning key nutrients to the soil.
